A strawberry poke cake covered with cream cheese frosting, then decorated with blueberries and strawberries to make the American Flag!

Poke cakes seem to be extremely popular this past year in the food blogging community.

A cake is baked, either from a mix or from scratch, and after it cools for a bit you poke holes throughout it and pour jello or pudding over the top.

Since the fourth of July is just around the corner it seemed the perfect time to make a patriotic strawberry poke cake.

Ingredients

Cake:

  • 1 15.25 oz boxed white cake mix
  • 1 cup boiling water
  • 1 3 oz box strawberry flavored Jell-o
  • 1/2 cup cold water

Frosting:

  • 1 8 oz tub Cool-Whip whipped topping
  • 1 8 oz package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Topping:

  • 1 pound strawberries cut into triangles
  • 2 cups blueberries Depending on how big or small they are, the cup size will vary. I used 50 blueberries that were a mix of medium and large sizes

    Made this cake the night before the the fourth and then did the frosting and decorating on the fourth. I was also worried at first but it was so good and everyone loved it so much. One of the best Pinterest recipes and mine actually looked like the picture.

    I made this before and it was amazing. But lately when I’ve made the frosting it comes out looking like cottage cheese with lumps in it. What am I doing wrong??

      I have had that happen with cream cheese frostings if the cream cheese is too cold. You can try putting the prepared frosting in the microwave for about 20 seconds and stir very well.

    When I was making the jello part, I read the directions on the box, instead of on here. So I put 1 cup of cold water instead of 1/2 cup. Is this going to ruin the cake?

      I did the same thing! I don’t see an answer to this?! Ahhhh it’s in the freezer now to rush the jello part so I can frost and take to a party in 2hrs! What happened with the extra water???

    I am currently making this for the 4th, which is tomorrow!! The cake is baking now, and I figure I’ll just poke and add Jell-o and frost. I’ll decorate tomorrow. It is 1pm and we won’t get to our party for another 28 hours – should I do as I said above, or wait to frost? I figure this far in advance, the Jell-o will absorb and intensify the flavor of the cake, which I would like. If ya can, please advise! Thanks in advance and happy 4th!

    This is a great recipe! The cream cheese adds a wonderful taste to the frosting compared to other recipes that use pudding mix. My cake “domed up” in the center, so I used a bread knife to slice horizontally to make the cake more flat. This helps with the fruit sitting on the frosting. Also, I used paper towels to blot extra moisture from the strawberries to keep it from bleeding into the frosting. Turned out great!

    I just finished the cake by adding frosting and fruit. Since I am serving tomorrow, do I keep it uncovered or covered in the fridge? I was thinking uncovered so the fruit doesn’t get soggy being covered. Please let me know what you think is best. Thank you!!

    Oh my goodness this cake was SO DELICIOUS!! I made for Memorial Day and definitely making more for the 4th of July. So easy to make and colorful. Yummy!!
